The Smoothest Smoothie


Hello all! I know I have been gone for awhile. This is due to a wonderful and difficult diet I have started called the Whole 30. If you have not heard of it, you basically completely cut out sugar of any kind, alcohol, all grains including corn, legumes, peanuts, dairy, carageenan, MSG, sulfites, potatoes, and obviously desserts and junk foods. For 30 days straight without cheating at all. It has been tough but it will pay off in the end, I know. It is supposed to heal your body and digestive tract and stomach. In a sense, it resets your body and cleanses it. So, point is due to this strict diet, I have not been making any delicious desserts or any of that. 
But I did discover/make up a really good, healthy, no added sugar smoothie! It sustains you for a few hours too, so you can have it for breakfast or take it on the go! The avocado and spinach (I know it sounds kinda weird but its not) makes it extremely creamy and smooth. Seriously the best smoothie I've ever made. And I have made a lot of smoothies in my day. Feel free to use whatever type of fruit you like, and as many of different types as you wish! I only used frozen fruit because it is what I had on hand, but fresh would be even better. Try it out! Green Smoothie (its not really green):

  • 1 ripe banana
  • 1/3 cup blueberries
  • 1/2 cup mangoes
  • 1/2 cup strawberries and or raspberries
  • Almond Milk (add until desired consistency)
  • Trader Joe's Filtered Organic Apple Juice (no sugar added)
  • 1 Tablespoon flax
  • 1/2 ripe avocado
  • Handful of Spinach
  • Crushed Ice
Blend together in a blender and drink up!

Mint Cookie Trifle

When I first saw this recipe, the name caught my eye because it was inspired by the famous Thin Mints that Girl Scouts sell. It was called "Thin Mint Trifle". First of all, I didn't know what a trifle was but I didn't even care. It looked delicious. (A trifle is a dessert dish made from thick custardfruitsponge cake, fruit juice or jelly, and whipped cream. These ingredients are usually arranged in layers) This dessert took me literally less than 10 minutes to make. It only has 4 ingredients and it tastes like a mint festival in your mouth. I substituted the Thin Mints for Mint Dipped Oreo s which you can find at almost any store. You can also try Keebler Grasshopper Fudge Mint Cookies and they taste very similar  The only reason I didn't use Thin Mints is because I couldn't find a girl scout at the moment, so I decided to settle for Mint Oreo's which were actually amazing. Anyway this is a unique, fun find and I wanted to share it with you all. xoxo!







Ingredients:


1 1.4oz Jello-O Sugar Free Instant Chocolate Fudge Pudding
*Milk for jello
1 container Cool Whip – Lite, thawed
1 box Keeblers Grasshopper Fudge Mint
Fresh Mint


Preparation:

Make Jello according to directions on the box. Let set 10 minutes in fridge.

Place cookies in a zip lock bag and crumble with a rolling pin.

In small glasses, layer heaping tablespoons of Jello, Cool Whip, and crushed Thin Mints. Top with a fresh mint sprig and whole cookie.  Place in fridge until ready to serve.

It's a Little Chili Outside...

So, I have been doing desserts for the past few blog posts, and now it is time to switch it up! For dinner tonight is the most delicious and hearty chili you will ever have. Its a three bean chili. I took a recipe from Rachael Ray and modified it a lot, basically making it my own. This chili is literally the most simple one I've ever made, it basically makes itself. It takes less than a half an hour to prepare, make, and serve! You don't have to let it sit or simmer for hours and hours. If you want to spice up the chili a little bit more you can add a tablespoon more chili powder than I did, and a few drips of hot sauce if you would like. It's very chunky, which I like. Plus, it is packed with protein, fiber, and antioxidants  The flavor is rich and you can really taste the yummy allspice too. I chose to pair it with a side of homemade guacamole and tortilla chips. I did my own guacamole recipe, but you can choose your favorite guacamole from the store or make your own! It also tastes good if you put a dollop of guacamole on top of the chili and crush up some tortilla chips and put them on top. Be creative, add whatever you want to it and make it your own! xoxo












Three Bean Chili

INGREDIENTS


  • 1 Red bell pepper (diced)
  • 1 Orange bell pepper(diced)
  • 1 Large clove of garlic (cut up)
  • 1 medium yellow onion (diced)
  • 1 Cup vegetable broth or half bottle beer
  • 24 oz can crushed tomatoes
  • 1 can black bean, don’t drain
  • 1 can kidney beans, don’t drain
  • ½ can refried beans, no fat
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • Salt and pepper
  • 1.2 pound ground beef 
  • Cheese (Shredded, on top)
  • Scallions (on top)

DIRECTIONS

  1. Put onions, peppers in a large pot with olive oil and stir and let on medium to low heat for 5 min
  2. Add broth, garlic, crushed tomatoes, all 3 beans, without draining, and stir
  3. Add spices
  4. Put on low for 5-10 min, no lid
  5. Fry up ground beef and add to chili
  6. Let sit for another 5 min

Top with shredded cheese and scallions, if you want!
Add a side of chips and guacamole :)
