It's a Little Chili Outside...

So, I have been doing desserts for the past few blog posts, and now it is time to switch it up! For dinner tonight is the most delicious and hearty chili you will ever have. Its a three bean chili. I took a recipe from Rachael Ray and modified it a lot, basically making it my own. This chili is literally the most simple one I've ever made, it basically makes itself. It takes less than a half an hour to prepare, make, and serve! You don't have to let it sit or simmer for hours and hours. If you want to spice up the chili a little bit more you can add a tablespoon more chili powder than I did, and a few drips of hot sauce if you would like. It's very chunky, which I like. Plus, it is packed with protein, fiber, and antioxidants  The flavor is rich and you can really taste the yummy allspice too. I chose to pair it with a side of homemade guacamole and tortilla chips. I did my own guacamole recipe, but you can choose your favorite guacamole from the store or make your own! It also tastes good if you put a dollop of guacamole on top of the chili and crush up some tortilla chips and put them on top. Be creative, add whatever you want to it and make it your own! xoxo












Three Bean Chili

INGREDIENTS


  • 1 Red bell pepper (diced)
  • 1 Orange bell pepper(diced)
  • 1 Large clove of garlic (cut up)
  • 1 medium yellow onion (diced)
  • 1 Cup vegetable broth or half bottle beer
  • 24 oz can crushed tomatoes
  • 1 can black bean, don’t drain
  • 1 can kidney beans, don’t drain
  • ½ can refried beans, no fat
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • Salt and pepper
  • 1.2 pound ground beef 
  • Cheese (Shredded, on top)
  • Scallions (on top)

DIRECTIONS

  1. Put onions, peppers in a large pot with olive oil and stir and let on medium to low heat for 5 min
  2. Add broth, garlic, crushed tomatoes, all 3 beans, without draining, and stir
  3. Add spices
  4. Put on low for 5-10 min, no lid
  5. Fry up ground beef and add to chili
  6. Let sit for another 5 min

Top with shredded cheese and scallions, if you want!
Add a side of chips and guacamole :)
